Lemon Blueberry Scones with Lemon Glaze


Good morning fellow food lovers. This will be the first in what I hope is many stories of Quinnies food adventures. I am Stormie. Birth giver to this amazing child who always wants to be in the kitchen "Cookin", as she says. We have been cooking together almost every weekend for a few months and due to some peoples suggestions here we are, doing the vlog/blog business.
We usually do baking such as cupcakes, cookies, muffins and now scones, but we are always looking for new suggestions and recipes to try.
So lets dive right into this one shall we?

This weekend we chose a recipe for Lemon Blueberry scones with a Lemon glaze. Quinn loves all things sour and tart so I figured this lemony recipe was going to be right up her alley.
This recipe has 13 ingredients which made it really easy, most of which we already had in our pantry.

You will need:
1 1/2 cup fresh blueberries
2 1/2 tbsp fresh lemon zest
1/4 cup lemon juce
1 tbsp lemon juice
1 tbsp baking powder
2 cups flour
1/2 tsp salt
1/4 cup sugar
1/2 cup powdered sugar
1/4 tsp vanilla extract
6 tbsp butter
1/2 cup milk

preheat oven to 400 degrees
In your stand mixer, or with a hand mixer, combine flour, sugar, salt and baking powder.
Cut butter into smaller chunks and place in bowl with the dry ingredients. (I cut mine into 8-10 pieces so it broke down faster in the mixer)
With your mixer, mix the dry ingredients and butter together. You will want this on medium speed until the butter is broke down into tiny little pieces.
Mix in your milk, vanilla, lemon juice and 2 tbsp of lemon zest.
Once everything is combined place on lightly floured surface. I hand patted out the dough until it was pretty flat. Fold the blueberries into the dough being careful to not squish any of them.
Form the dough into a rectangle. Cut the dough in half, hamburger style. Then proceed to cut the two sides into 4 triangles each.
Place on a parchment lined cookie sheet and bake for 17-20 minutes. Mine took a little longer to achieve the light golden brown color, so more like 22 minutes. Just be sure to check on them often.
To make the glaze combine powdered sugar, 1 tbsp lemon juice and remaining lemon zest in a small bowl. Drizzle over scones once they are out of the oven.




These scones came out perfect! They were lemony and had the sweet bite of blueberries which was perfect. Quinn wanted to eat the whole bowl of the glaze it was that good! We will definitley be making these again and sharing them with our friends and family!
